Change the other reactant's concentration by uniform intervals. I'd use 5 different values for the changing concentration.How you measure the rate will be determined by what you are using. So I kept all other variables constant and only changed my enzyme concentration. 5ml, 4ml, 3ml, 2ml, 1ml, and 0ml. Are you using hydrogen peroxide and catalase?
