I'm taking Math A&I SL because math isn't my strong suit, and taking 4 HLs is too difficult for me. Does this really significantly lower my chance at getting accepted into universities? When we consider STEM based university courses then yes AI SL would be considered a soft option but for a Humanities centered course like Psychology this wouldn't be an issue provided that you do well in relevant subjects like Psychology and Biology + I believe its better to give your best to get a 7 in AISL than perhaps struggle in AIHL/ AASL in a subject thats not your strong suit.
