I think developmental Psychology is the easiest, I take it myself It is really easy to understand and you don't need extra research to understand the topic. If you take biology it would also be easier because you need some knowledge of the parts of the brain and the changes the body goes through during puberty (including the hormones). I find it interesting as well. The Oxford Psychology textbook for the IB DP is really good and explains this topic well.
