I suggest you get familiar with the marking schemes of past papers - your school should have some resources. The exam format will be slightly different (as the curriculum changed), but you should be able to get a gist of what will score you marks and eliminate time wasting by writing more efficiently. The Pearson textbook is useful if you're completely lost because it has "cheat sheets" on how to draw graphs and solve quantitative problems for paper 3.

this is pretty much what you need to know about an evaluation.

As far as the essay is considered, there's a standard structure that must be followed. It includes defining the terms, stating & analysing the theory, evaluating then you conclude.
